1. carne cruda: hand-cut fillet of beef marinated with salt, olive oil and pepper.

2. leche de tigre: refreshing marinade consisting of lime, red onion, ginger, chilli and coriander

3. lardo colonnato: bacon from Colonnato matured for 6 months in a sea salt and spicy mountain herb coating

4. pearl barley koji: Swiss organic pearl barley fermented with the shoyu koji mushroom produces a soy-like seasoning sauce

5. veg alp rande: produced by Jann Hoffmann from Davos: the rande is refined in a similar way to the Bündner dried meat

6. Ventricina: spicy sausage from Abbruzzo
